Evenness

Evenness when used of beverages, especially coffee, describes the uniformity of everything from dose, to grounds, to the actual espresso, etc.

For example, a low quality grinder can result in grinds that are inconsistent in size and texture in a single dose. In this case, it has undesirable evenness.

A coffee that was not agitated might have residue products in the drink itself. This can be deemed as an uneven cup of coffee.

Evenness in coffee is one of those key concepts that can be so obvious, yet neglected due to how obvious it is.

While all these goal towards evenness has it’s origins from the correlation of evenness and quality, it shouldn’t bother most people except perfectionists.

It must be noted however that coffee with excellent evenness does not necessarily make it good. But good coffee will usually have a high degree of evenness.
